Carrot-Spinach Soup

Ingredients

  • 2 cups milk
  • 2 tsp butter
  • ½ cup chopped onions
  • 1 ½ cups chopped spinach
  • ½ cup chopped carrot
  • Salt and black pepper to taste

Method of preparation

  • Heat butter in a deep non-stick pan, add onions and sauté on a medium flame for 2 minutes.
  • Add carrot and ½ cup of water and mix well. Cover it with a lid and cook on a medium flame for 4 minutes.
  • Add spinach, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  • Add milk, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
  • Allow the mixture to cool completely. Then, blend in a mixer till smooth.
  • Transfer the mixture back into a deep non-stick pan, add the salt and pepper, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  • Serve immediately.
